Mushy Peas 1 cup dried green peas 4 cups water 1 clove garlic, optional 2 tablespoons butter 2 teaspoons salt or to taste 1 teaspoon pepper or to taste Soak peas in water (remove any that float!) over night. Bring them to a slow boil in the water they were soaked in. Reduce the heat and simmer until the peas are tender.(this could take upto an hour or more depending on the peas) After draining the peas, mash slightly and add the other ingredients. Mix well and serve hot. 1 cup of dried peas = 2 1/2 cups cooked Printable version: mushy-peas02.txt.
